I. Whole Foods Plant Based Tomato Sauce (No Oil, No Sugar)
There is no need to add additional fat or sugar to your diet. If you use fresh, locally grown organic tomatoes, you can make a delicious, sweet, and rich sauce without oil or sugar to use on pastas, rice and beans, or even as a soup. Check out Craig’s video making sauce with tomatoes and basil from the garden, and refer to the recipe below:
Ingredients
- ▢1/2 onion diced
- ▢6 garlic cloves minced
- ▢1 1/2 cups fresh tomatoes 340g, diced
- ▢one 28 ounce can diced tomatoes in their juice Muir Glen uses BPA free cans so I stick to that brand
- ▢1/2 cup tomato paste 120g
- ▢1 cup tightly packed fresh basil 35g, chopped
- ▢1 teaspoon dried oregano
- ▢1 teaspoon sea salt 6g
Instructions
- Heat a large pan and add the onions.
- Cook on medium heat for 5 minutes, stirring intermittently.
- After 5 minutes add 2 tablespoons of water and stir.
- Add the garlic, fresh tomatoes, canned tomatoes, tomato paste, basil, oregano and sea salt and stir until all ingredients are combined.
- Turn the heat down to low and cover with a lid at an angle so the lid isn’t tight.
- Simmer for one hour, stirring every 10-15 minutes.

Eat Down Home and Still Be Healthy!
Ms. Loving made some delicious oil-free collard greens. She added them to a Buddha Bowl she made. (Blasian Fusion!) Below is the extremely healthful Collard Recipe. Stay tuned for more posts from Mrs. Loving on cooking oil free.
For the Buddha Bowl, she made a tahini sauce over quinoa, with black beans (made with smoked paprika), roasted squash and sweet potato, and steamed broccoli, and steamed green beans, and add on fresh garden tomatoes. She used this recipe for the tahini sauce:
